General tso tofu
ingredients⌗
- 14oz extra firm tofu
- 2 scallions
- 2 cloves garlic
- 1 inch garlic
- 1/4 cup cornstarch
- 1c rice
- 10 oz Baby bok choy (2 bunches)
- 4oz sugar snap peas
- sesame oil
- trader joes general tso sauce
cook!⌗
- cook the rice!
- in my rice cooker….
- 1c rice
- fill to the “1” line with water
- press start :)
- in my rice cooker….
- drain tofu
- line plate with paper towel
- compress tofu with heavy pan
- 10 mins at least. get all that water out!
- chop!
- tofu to cubes
- pull string from green bean
- chop ginger
- slice scallions - separate white from green (garnish)
- cut and discard bok choy root. Rough chop leaves.
- coat tofu with cornstarch, s&p
- cook in oil 4 mins (no toss) - then 4 more
- transfer to paper towel lined plate
- add sesame oil
- cook pea mixture (peas, white scallions, ginger, garlic)- 2 min
- add bok choy - 4 min
- add trader joes sauce
- put on rice - top with green scallion!
