ingredients

  • 14oz extra firm tofu
  • 2 scallions
  • 2 cloves garlic
  • 1 inch garlic
  • 1/4 cup cornstarch
  • 1c rice
  • 10 oz Baby bok choy (2 bunches)
  • 4oz sugar snap peas
  • sesame oil
  • trader joes general tso sauce

cook!

  1. cook the rice!
    1. in my rice cooker….
      1. 1c rice
      2. fill to the “1” line with water
      3. press start :)
  2. drain tofu
    1. line plate with paper towel
    2. compress tofu with heavy pan
    3. 10 mins at least. get all that water out!
  3. chop!
    1. tofu to cubes
    2. pull string from green bean
    3. chop ginger
    4. slice scallions - separate white from green (garnish)
    5. cut and discard bok choy root. Rough chop leaves.
  4. coat tofu with cornstarch, s&p
  5. cook in oil 4 mins (no toss) - then 4 more
  6. transfer to paper towel lined plate
  7. add sesame oil
  8. cook pea mixture (peas, white scallions, ginger, garlic)- 2 min
  9. add bok choy - 4 min
  10. add trader joes sauce
  11. put on rice - top with green scallion!
