Ingredients

  • 2 eggs
  • 4oz Sugar Snap Peas
  • 1 peach
  • 1 shallot
  • 1 oz dried dates
  • 2 Tbsp Sliced Almond
  • 1/2c semi-pearled faro
  • 4oz grape tomatoes
  • mint (garnish)
  • 1 Tbsp red wine vinegar
  • 1 1/2 oz feta cheese
  • 1 Tbsp Coriander (original asked for Ras El Hanout)

cook!

  1. cook the farro
    1. Boil salted water
    2. add ferro
    3. add coriander
    4. cook 18-20 min
    5. drain
  2. combine in a bowl
    1. halved tomato
    2. diced peach
    3. vinegar
    4. 1/2 tsp olive oil
    5. S&P
    6. marinate 10mins or more
  3. cook shallot and peas
    1. Cook shallot (well)
    2. add peas.
    3. s&p
    4. cook 4-5 min
  4. add all to a bowl
    1. add chopped dates
    2. add almonds
    3. stir
  5. serve topped with fried egg
  6. garnish with Mint if desired!
