Peach_and_snap_pea_grain_bowl
Ingredients⌗
- 2 eggs
- 4oz Sugar Snap Peas
- 1 peach
- 1 shallot
- 1 oz dried dates
- 2 Tbsp Sliced Almond
- 1/2c semi-pearled faro
- 4oz grape tomatoes
- mint (garnish)
- 1 Tbsp red wine vinegar
- 1 1/2 oz feta cheese
- 1 Tbsp Coriander (original asked for Ras El Hanout)
cook!⌗
- cook the farro
- Boil salted water
- add ferro
- add coriander
- cook 18-20 min
- drain
- combine in a bowl
- halved tomato
- diced peach
- vinegar
- 1/2 tsp olive oil
- S&P
- marinate 10mins or more
- cook shallot and peas
- Cook shallot (well)
- add peas.
- s&p
- cook 4-5 min
- add all to a bowl
- add chopped dates
- add almonds
- stir
- serve topped with fried egg
- garnish with Mint if desired!
