Ingredients⌗
- 2 onions
- 4 cloves garlic
- 3 Tbsp Unsalted butter
- 1/4 tsp crushed red pepper
- salt
- pepper
- 2 heads of broccoli
- 1 medium russet potato (OPTIONAL)
- 8 oz sharp cheddar
Cook!⌗
- Coarsely chop onion and garlic
- Trim bottoms of 2 heads of broccoli and peel stems.
- Coarsely chop stems
- set aside florets
- Melt Butter over medium-low heat.
- Add onion, garlic, pepper flakes, salt, pepper
- cook stirring often 8-10 mins
- Add broccoli stalks (and potato) to pot.
- pour in 5 cups of water and 1 Tbsp salt.
- bring to a boil over high heat.
- reduce to medium-low and summer. covered. 20-25 mins until fork tender
- add some florets to pot, cover. Until bright green (3-5 mins)
- Blend!
- Add remaining florets - cook 3-5 mins.
- Add 2cups shredded cheese
- stir until smooth
- Mix in 1/2 cup of greek yogurt
