Dashi

Cook⌗
- Combine kombu and 8 cups of water. Let sit until kombu softens, 25-35 mins.
- Bring to a boil over medium heat.
- Remove from heat and fish out Kombu 1
- Add bonito flakes and stir ONCE to combine
- return to a gentle boil, reduce heat, simmer gently
- skim off any foam
- 5 mins
- Let steep off heat, 15 mins
- strain dashi through a fine mesh sieve or cheesecloth lined colander.
- DO NOT PRESS ON SOLIDS
