Ingredients

  • 2 - 6x5 Inch Pieces of dried Kombu 1
  • 1 1/2 oz bonito flakes 2

Cook

  1. Combine kombu and 8 cups of water. Let sit until kombu softens, 25-35 mins.
  2. Bring to a boil over medium heat.
  3. Remove from heat and fish out Kombu 1
  4. Add bonito flakes and stir ONCE to combine
  5. return to a gentle boil, reduce heat, simmer gently
  6. skim off any foam
  7. 5 mins
  8. Let steep off heat, 15 mins
  9. strain dashi through a fine mesh sieve or cheesecloth lined colander.
  10. DO NOT PRESS ON SOLIDS
